As the name implies, Brussels sprouts get their name from their country of origin, Brussels. Sulforaphane is the chemical which gives Brussels sprouts their unique flavor and also helps to lower cancer risks. Steam cooking them actually helps to improve their cholesterol lowering capacity.
Seasonality: Brussels sprouts are a winter crop, seen starting in November and lasting through March.

The Basics: Just like cabbage, you will want to cut the bottoms of the stems off each head and remove the outer most layers of leaves. You can cut a small X at the base to help cook more evenly, or cut in half or quarters to help speed the cooking up.
